MMMMM Low Fat, Low Sugar Anzac's
I found this recipe in a mag for low fat, low sugar anzac's, and must say i was pleasantly suprised when i made and tasted them. They ARE nice. Crunchy on the outside but soft on the inside. And didnt take long to mix up, cook and cool.
Here they are.

1 c desicated coconut
1 c Plain flour
1 c rolled oats (not instant)
1/4 c splenda
1/4 c sugar
1 TB golden syrup
1/2 c olive oil
1/2 tsp bicarb soda.
Preheat oven to 180c
Mix coconut, flour, sugar, splenda and oats together.
Warm syrup in microwave for 10 secs. Add oil.
Mix soda with 2 TB boiling water. Add to oil mix.
Add both mixes together t0 form a firm dough.
Put teaspoon full balls onto a greased tray.
Flatten.
Cook for 10-12 mins until begining to crisp.
